Title: Basic Waffles

2cFlour
1 1/2tsBaking powder
1/2tsBaking soda
1/4tsSalt
3lgEggs; separated
3/4cMilk
3/4cSour cream
6tbButter; melted

Sift the dry ingredients together in a large bowl. Beat the egg yolks until light and add to the dry ingredients, along with the milk, sour cream, and melted butter. Beat until the batter is smooth. Beat the egg whites in a medium-size bowl until stiff peaks form. Fold the beaten egg whites into the batter.

Preheat the waffle iron. Pour or ladle about 1/2 cup of the batter into the iron. Close and bake until the waffle is golden brown and comes away easily from the iron, 3 to 4 minutes. Serve with butter, maple syrup, or jam, along with some sausages or crisp bacon for a statisfying breakfast or supper. The waffles may also be topped with creamed meats or veggies and eaten whenever you please.
